Sautéed Onions, Mushrooms, and Peppers

We eat onions like it is a food group. We add 1 or 2 large onions to a dish, when we are cooking. Onions adds bulk to a recipe, with very few calories and onions add spice and flavor to any dish.

Onions are good for you, so eat more of it. You can eat it raw or cooked. Onions have antibacterial and anti-inflammatory properties, vitamin C, and folate. “Western yellow onions are the healthiest for their phenolic and flavonoid content.”

There are many types of onions, sweets onions and yellow onions. We like to use all of them. Lets Make some ital.

 

Ingredients

  • 2 garlic cloves
  • 1 onion
  • 4 small bell peppers or 1 large
  • 1/2 jalapeno pepper
  • 8 Mushrooms( use as much as you like)
  • 3 tablespoons of olive oil
  • paprika
  • chill powder

Equipment

Frying pan and Oven pan( we use a cast iron pan)

Cooking Instructions

  1. Preheat oven at 420 degrees
  2. Turn the stove on to medium high about 8
  3. Add oil to the frying pan
  4. Once the pan is hot add onions peppers, mushrooms and garlic.
  5. Add about 2 shakes of paprika, rosemary leafs and chill powder seasoning( feel free to add whatever seasoning you like).
  6. After 3 mins turn off the stove
  7. Transfer the food from the frying pan to the oven pan
  8. Place the oven pan in the oven
  9. Let everything cook in the oven for about 25 -30 mins.
  10. In intervals of ten mins check the oven and stir the food.
  11. Add salt to your taste.  We like to use pink himalayan salt. We prefer to add salt, to our food, after cooking.  if you add salt to your food add at the end. use sparingly…

You can serve this dish with rice, or roasted potatoes, or sweet potato or broccoli.  There are lots of possibilities .
